The bigger question is where all the water came from to form the ice. We don't store that much oil in our faces.

They weren't in a vacuum. They were on Pluto. Pluto has an atmosphere.

Freezing and the formation of ice crystals from rapid evaporation of liquids, yes. There would be significant freezing. Although it is exaggerated in this cartoon.
